The Casa al Torchio Restaurant and Pizzeria is a historic restaurant in the centre of Bolzano, which offers South Tyrolean gastronomic specialties and tasty dishes of typical South Tyrolean cuisine. The building is in fact an ancient house with a tavern, which since 1786 has been offering dishes of local gastronomy. South Tyrolean cuisine is an expression of culinary art developed in the province of Bolzano. A combination of Tyrolean and Italian tradition, the typical cuisine of South Tyrol is characterised by the use of products popular among German-speaking populations, such as sauerkraut, canederli, spätzle, schlutzkrapfen and goulash. Many of these dishes are also characteristic of Trentino cuisine, by virtue of the centuries-old union of Trentino with South Tyrol under the Habsburg monarchy. Alongside the typical Tyrolean dishes, delicious dishes from traditional Italian cuisine are present in South Tyrol, such as ravioli, gnocchi, tiramisu and polenta.
